Mama's Kartoffelsalat

Contrary to how it may come across on this blog I am very much 100% German and proud of my heritage.  My parents have always worked very hard teaching my brother and me about our family history and keeping our German family traditions alive.  One of these is being able to make the perfect Kartoffelsalat (potato salad).

To make this salad you will need:
• at least 1kg of potatoes
• powder stock
• a big onion
• 4-5 carrots
• olive oil
• white wine vinegar
• parsley
• salt and white or black pepper to season
• diced bacon/lardons if desired

Step by step recipe:

1. Fill a big pot with water.  Add the potatoes and carrots, place the lid on and cook on a high flame
2. Cut the onions finely and fry them in lots of oil until clear.  Set aside for later
3. When the water in the potato and carrot pot boils, turn down the fire to a smaller flame and put 10 minutes on the timer
4.  Continue to let the water boil until the timer rings, check to see if the potatoes are soft (pierce with a knife to check)
5.  Once the potatoes are ready empty the water out using the lid to keep everything in the pot
6.  Once all the water is emptied out, immediately fill the pan with cold water (this will cool the potatoes for you so it's easier to peel them later)
7. Peel the potatoes and cut them into medium thick slices into a big bowl (the potatoes will break slightly don't worry about it)
8.  Peel the carrots and slice them into the bowl with the potatoes
9. Boil the kettle and add the boiling water to a cup with one and a half spoonfuls of powered stock, and then pour this mixture over the potatoes and carrots and mix everything thoroughly.  Depending on how many potatoes you have you might have to add another half a cup of stock.
10.  Add the onions to the bowl
(optional: if you choose to use lardons fry them until they are crispy, drain the fat away and add them to the potatoes, carrots and onions)
11.  Season with salt and pepper as desired.
12. Add some olive oil and then the white wine vinegar. It's best to add a little at first, always taste it and then add more if you want.  The salad is not meant to be very sour, a little acidity will be enough
13. Season with parsley and add more salt if you'd like
14. Mix everything throughly and serve

The Kartoffelsalat is best served as a main course with hot Bratwurst from the grill or a Schnitzel with a nice cold beer or a glass of rosé wine, but can just as easily be served on its own.
